Gingery Apple Crumb Thing

If we're not eating out, I tend to do most of the cooking. So it's surprising when M takes control of the kitchen. M came up with this recipe and asked me to share it.

5 baking apples, cored and sliced
1/2 stick butter, unsalted
1 box ginger snaps

Combine the apples with enough cinnamon and sugar to your liking. Reserve enough ginger snaps to top (for a 9x9 pan, 10 to 16 should suffice), and crush the rest. Melt the butter in the microwave and add to crushed cookies. Press into a 9x9 baking dish; add apples and cookie topping. Bake in a pre-heated 350 degree oven for about 15 minutes, or until apples are cooked through.
