DINNER: Marinated Pork Loin and Collard Greens


Aside from the rice, the food in this picture was either cooked or prepped by my dad. My parents, along with some other family members came up this past weekend for a get together (which I’ll get around to writing about). Being the awesome dad (happy early Father’s Day!) he is, he marinated a whole pork loin to grill up (never got to it – too much food) and collard greens cooked in coconut milk for M. See… my family likes him.

Anyways, I cut about a third of the loin into cubes and cooked it in the wok. Threw in the greens at the end and ate with rice. Amazing. And now I have to remember to throw the rest of that meat into the freezer or it’ll spoil.
