I'm really not a fan of restaurants make nachos. You definitely can have too much of a good thing- and every version I've seen has been gluttonous. Heaping mounds of shredded cheese (or worse, cheese whiz) and toppings that shouldn't be on there (if you're going to put olives, at least put good tasting ones). The chips end up getting soggy and you're left having to eat them with a fork.

How do I like nachos? Just a light sprinkling of cheese and a good salsa. You don't need much than that. Sogginess still occurs, but it's only a chip or two.
